Ingredients:
- 2 1lb bags black beans
- 2-32oz Vegetable Broth
- 48oz Chicken Broth
- 2 Vegetable bouillon cubes
- 2 Apples diced
- 4 Yams diced
- 2 Yellow onions diced
- 10 Cloves garlic chopped fine
- ½ Bag baby carrots
- 1T Cinnamon
- 1t Allspice
- 1t Ginger
- 1t Cloves
- 1t Nutmeg
- 1t Salt
- Ground Black Pepper
Directions:
For this weight loss diet recipe, soak the black beans 6-8 hours prior to cooking. Be sure to rinse thoroughly. Combine all the ingredients and bring to a boil. Then reduce heat and simmer for 6-8 hour or until beans are tender. This makes a large batch and is great for freezing. Use as a main dish and top with shredded carrots (shown here) or use as a side dish or filler in burritos and tacos and top with chopped green onions.
