½ bag baby carrots
1 red bell pepper diced
2 yellow onions diced
Makes: 8 quart Crock Pot
Gluten free, healthy dinners for weight loss. This Mediterranean diet dinner recipe is low fat and full of protein. After soaking the beans overnight (8 hours) rinse in a strainer and put into a 8 quart slow cooker crock pot. Add vegetable broth and stir. Then add diced onions and bell pepper and baby carrots (leave the baby carrots whole). Add vegetable bouillon and garlic and star anise and stir. Add all the dry herbs and stir again until all dry herbs are absorbed. Let it cook overnight on low. It needs to cook for at least 8 hours. Beans should be very tender when done.
Tip:
You can add hot sauce and salt to taste. Salt wasn’t added to this recipe because there is salt in the bouillon, Season All and vegetable broth. Going heavy on the dried herbs and spices allows deeper layers of flavors and so you may not need to add salt at all. Serve in a bowl topped with a sprinkle of fresh parsley or cilantro or grilled mushrooms and a slice of gluten free toasted bread brushed with olive oil.
