Ingredients:
4-6 Small heads Romaine Lettuce
3/4 Cup Olive oil
4 cloves fresh garlic
Juice of 1 lemon
Zest of 1 lemon
3/4 Cup Grated Parmesan Cheese
2 t Anchovy paste
2 Eggs
1 Avocado
Black Pepper
Pinch of salt
Directions:
Best salad for weight loss and it's gluten free. Full of healthy fats which keeps your body in "fat burning mode." Wash, dry and tear romaine lettuce into bite size pieces. I like to use a salad spinner to dry my lettuce thoroughly.
To make the dressing use a food processor. Blend all the rest of the ingredients together until creamy and smooth. The avocado makes the dressing creamy and delicious.
To make croutons: Use any gluten free bread and brush with olive oil and place on a cookie sheet and broil in the oven at 500 degrees until the bread is toasty brown. Slice into small 1 inch squares.
Toss 1/4 cup of the dressing over the lettuce, coating it generously. Feel free to use more dressing. Serve immediately with a sprinkle of parmesan cheese, cracked black pepper and croutons. (The salad will become soggy and saturated with the dressing if not served immediately.)
