Ingredients:
5 Apples or about 5-6 cups apples sliced thin
2T Lemon Juice
4 T Maple Syrup divided
1T Vanilla
2T Tapioca Starch
2-3 T Cinnamon divided
½ t Salt divided
1 Cup chopped walnuts
½ Cup Coconut grated
½ Cup Coconut flour
½ Cup Coconut Oil melted
Directions:
Try this guilt free, healthy desert. It is a low carb, and keto friendly desert. Combine apples with 1T maple syrup, ¼ t salt, vanilla-eyeball it and be generous, 1T cinnamon-eyeball it and be generous, lemon juice, tapioca starch. Mix in a bowl and scrape down the sides to get all the juices into the baking pan.
Topping:
Combine walnuts, grated coconut, coconut flour, coconut oil, 1T cinnamon, 1/4t salt and 3T maple syrup. Topping should be crumbly. I like to add more cinnamon to taste, so feel free to add more cinnamon and more vanilla for a richer taste.
Bake at 350 degrees for 25min or until the topping is golden brown.
