Ingredients:
1 Carton Egg Whites 16oz
6 cups raw spinach washed and dried
½ yellow onion diced
½ red pepper diced
3 green onions chopped fine
1 tomato sliced
Chopped cilantro
Avocado oil or Non stick pan spray
Directions:
This is a healthy breakfast for weight loss. In a skillet or wok rub with oil or spray with non stick spray and coat evenly. Caramelize the onion and bell pepper. Add spinach and cover to wilt the spinach. Takes about 2minutes. Drain in a strainer to get all the liquid out and set aside. Add more oil- just enough to coat the skillet or wok and add egg whites and ½ of the green onions and scramble until done. It should not be "liquidy". Plate the wilted spinach, onion and red pepper. Place egg white scramble on top of the greens. Top with green onion, cilantro and tomato. Salt and pepper to taste. Hot sauce and 1/4 sliced avocado are also nice toppers!
