Low fat lunch ideas-Southwest Quinoa Salad Bowl

Ingredients:


2 Cups Quinoa

1 can black beans

1 cup corn

1 cup peas

½ cup cilantro

½ cup onion

½ cup sliced mushroom (optional)

4 cups Vegetable broth

2 vegetable bouillon cubes

1tsp chili powder (optional)


Directions:

Easy low fat lunch idea for weight loss plan.  On the stove top in a 4 quart cooking pot or medium saucepan, bring the vegetable broth and bouillon to a boil. Add in the quinoa, reduce heat to low and simmer for about 15 minutes. Quinoa should not be watery.    Fold in the beans, corn, cilantro onion, peas chili powder and mushrooms. 


Serve hot or cold.  Great the next day.
