Recipe for split pea soup-meal planning for weight loss

Ingredients:


2 C dried split peas

3-32 oz. vegetable stock

1t vegetable bouillon

2lbs ham cubed 

1 yellow onion coarsely chopped

10-12 cloves garlic finely diced

1 whole jalapeno with stem on

4 carrots cubed

6 red potatoes cubed

2 sweet potatoes cubed

2 stalks celery with leaves coarsely chopped


Directions:


This is great meal planning for weight loss. In a large stock pot combine all ingredients and bring to a boil.  Stir and simmer with lid on for 1-2 hours. Fish out and remove the jalapeno. This makes a lot so you can freeze some for later or cut the recipe in half.
