Ingredients:
1-16oz bag Autumn blend lentils (rinsed)
1t Real Salt
2t Vegetable bouillon
3-32oz boxes vegetable broth
1t ground Allspice
3T curry powder
1/2t Anise seed (not ground)
1 whole bay leaf
1/2t ground black pepper
2T ground cumin seed
1t ground thyme
1T cumin seed (whole)
1T ground coriander
Juice of 1 lime
2 yellow onions diced
3 carrots diced
3 celery stalks diced
1 orange bell pepper diced
1 whole jalapeno stem on
1 bunch of cilantro chopped fine
Directions:
This lentil curry soup is a metabolism booster and is a food to help you lose weight. Place all ingredients in a stalk pot and bring to a boil stirring occasionally. Lower heat and simmer for 50 minutes or until the lentils are soft. Simmer with the lid of the pot tilted. When lentils are done, fish out the jalapeno and the bay leaf and discard.
Serve in a bowl and top with chives or diced green onions.
Tip: This is an Indian inspired dish. If you like it spicy, top with hot sauce.
