Anti-inflammatory diets-Butternut Squash Soup for losing weight

Ingredients:


3-32oz Vegetable broth

4 Vegetable Bouillon cubes

10-20 cloves garlic peeled and diced fine

2 yellow onions diced small

1lb Baby Yukon Gold potatoes quartered (skin on)

2 Sweet potatoes cubed bite size (skin on)

1 Butternut Squash cut in half, seeded and each half then quartered. Leave the skin on.


Directions:


Butternut squash soup is part of a anti inflammatory diet and assists in losing weight. Healthy and low fat, yet hearty and very filling.  Can be served as a main dish.  Bring all ingredients to a boil.  Boil until the butternut squash can be separated with a fork easily.  When the butternut squash is soft, fish it out of the soup and place in a high powered blender (Vitamix or BlendTec) with some of the soup liquid and blend until totally smooth. Poor it back into the soup pot and stir.  Let it simmer on low for 30 minutes and top with green onions and cracked black pepper.

Note:  The butternut squash has a shell or skin. The skin is loaded with vitamins and nutrients.  Leave it on - You’ll never know it’s there once you blend it smooth!
